- 3/4 cup chopped cucumber
- 2/3 cup sliced cherry tomatoes
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh parsley
- 1/4 cup extra virgin olive oil
- 1/4 cup apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon oregano
- 1/2 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Gather all salad ingredients in a large mixing bowl.
- In a mason jar, combine dressing ingredients and shake well until emulsified.
- Pour the dressing over the salad ingredients and toss gently to coat.
