- 2 cups apple cider

- 2 tablespoons apple cider (not reduced)
- ¾ cup granulated sugar
- 2 teaspoons ground cinnamon
- 1 cup powdered sugar
- ½ teaspoon vanilla extract
- 1 – 2 tablespoons apple cider (not reduced)
Instructions
- Reduce apple cider in a saucepan over medium heat until it reaches about ¼ cup. Cool to room temperature.
- Brown the butter in a saucepan over low heat until it turns nutty brown; cool for 15 minutes.
- In a bowl, whisk together flour, baking powder, baking soda, cornstarch, spices, and salt.
- In a large bowl, combine cooled browned butter with sugars; add egg, reduced cider, and vanilla until smooth.
- Mix dry ingredients into wet until just combined; let dough rest while preheating oven to 375°F (190°C).
- Scoop dough onto lined baking sheets and bake for 9–11 minutes until edges set.
- Cool cookies on racks before coating with an apple cider butter mixture followed by cinnamon sugar.
- Drizzle glaze over cookies before serving.
