  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter (room temperature)
  • 3/4 cup granulated sugar
  • 2 large eggs (room temperature)
  • 3/4 cup buttermilk
  • 2 teaspoons vanilla extract
  • 2 medium apples (peeled and diced)
  • 1/3 cup brown sugar

Instructions

  1. Preheat your oven to 350°F (180°C) and line a 9 x 4-inch baking tin with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon; set aside.
  3. In a separate bowl, cream together butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
  4. Gradually incorporate half of the dry mixture followed by buttermilk; fold in the remaining dry ingredients until just combined.
  5. Toss apples with brown sugar and cinnamon; layer half of the batter in the tin, add half of the apples, swirl gently. Repeat with remaining batter and apples.
  6. Bake for 55 to 65 minutes until golden brown. Cool on a wire rack before slicing.
