- 1 3/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup butter (room temperature)
- 3/4 cup granulated sugar
- 2 large eggs (room temperature)
- 3/4 cup buttermilk
- 2 teaspoons vanilla extract
- 2 medium apples (peeled and diced)
- 1/3 cup brown sugar
Instructions
- Preheat your oven to 350°F (180°C) and line a 9 x 4-inch baking tin with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, salt, and ground cinnamon; set aside.
- In a separate bowl, cream together butter and sugar until fluffy. Add eggs one at a time and mix in vanilla.
- Gradually incorporate half of the dry mixture followed by buttermilk; fold in the remaining dry ingredients until just combined.
- Toss apples with brown sugar and cinnamon; layer half of the batter in the tin, add half of the apples, swirl gently. Repeat with remaining batter and apples.
- Bake for 55 to 65 minutes until golden brown. Cool on a wire rack before slicing.
