Ingredients
- 5 oz fresh baby spinach
- 2 cups apricots (cored and sliced)
- 2 cups fresh cherries (cored and halved)
- 4 oz feta cheese (crumbled)
- ½ cup pecans
- 1 cup balsamic vinegar
- ¼ cup honey (or brown sugar)
Instructions
- In a mixing bowl, combine balsamic vinegar and honey (or brown sugar). Whisk until well blended.
- In a large serving platter or bowl, layer fresh baby spinach at the bottom.
- Top with sliced apricots and halved cherries.
- Sprinkle crumbled feta cheese over the fruit layer.
- Add pecans for added crunch.
- Drizzle dressing over the salad and gently toss to coat.
- Serve immediately or chill for about 10 minutes before enjoying.
