Ingredients
- 3 large ripe avocados
- 1 pint cherry tomatoes
- 4 ounces plain crumbled feta cheese
- 1 small bunch fresh parsley
- 1 tablespoon olive oil
- 1.5 tablespoons red apple vinegar
- Garlic powder, salt, and pepper to taste
Instructions
- In a mixing bowl, combine chopped tomatoes, feta cheese, parsley, olive oil, vinegar, garlic powder, salt, and pepper. Mix well.
- Cover the bowl and refrigerate for a few hours to meld flavors.
- Just before serving, gently fold in chopped avocados until well combined.
