Instructions
- Preheat your oven to 425°F (220°C) and spray a bread pan with non-stick cooking spray.
- In a large bowl, mix gluten-free flour, baking soda, and salt.
- In another bowl, combine sugar, eggs, canola oil, almond extract, and mashed bananas; stir until mixed well.
- Gently pour the dry ingredients into the wet mixture and stir until just combined.
- Fold in chocolate chips and pour into the prepared bread pan.
- Bake at 425°F for 8 minutes; then lower to 350°F (175°C) and bake for an additional 50-60 minutes. Check doneness by inserting a knife; it should come out clean.
