- 2 overripe bananas
- ½ cup canola oil
- ½ cup milk
- ½ cup caster sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
Instructions
- Preheat your oven to 160°C (320°F) if using convection or 180°C (355°F) for standard ovens. Grease and line a loaf tin.
- In a large bowl, mash the bananas until smooth. Mix in canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract until well combined.
- Sift in the flour, baking powder, and salt. Gently stir until just combined; a few lumps are fine.
- Pour the batter into the prepared loaf tin and bake for about 45-55 minutes or until golden brown. Check doneness by inserting a skewer; it should come out clean.
- Let cool in the tin for 10 minutes before transferring to a wire rack to cool completely.
