Instructions

  2. In a large bowl, mash the bananas until smooth. Mix in canola oil, milk, caster sugar, brown sugar, eggs, and vanilla extract until well combined.
  3. Sift in the flour, baking powder, and salt. Gently stir until just combined; a few lumps are fine.
  4. Pour the batter into the prepared loaf tin and bake for about 45-55 minutes or until golden brown. Check doneness by inserting a skewer; it should come out clean.
