- 1 cup apple cider
- 3 tbsp unsalted butter
- 1/4 cup sugar
- 1 large egg
- 2 tbsp plain Greek yogurt
- 1/2 tsp vanilla extract
- 1 cup all-purpose flour
- 1/2 tsp ground cinnamon
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- Pinch ground nutmeg
- Pinch ground cloves
- Pinch salt
- 3 tbsp unsalted butter (for coating)
- About 2 tbsp reduced cider (reserved from above)
- 1/2 cup granulated sugar (for coating)
- 1 1/2 tsp ground cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C) and grease a muffin tin.
- In a mixing bowl, whisk together the apple cider, melted butter, sugar, egg, Greek yogurt, and vanilla extract until well combined.
- In another bowl, mix the flour, ground cinnamon, baking soda, baking powder, nutmeg, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
- Fill each muffin cup about three-fourths full with batter.
- Bake for approximately 10 minutes or until a toothpick inserted comes out clean.
- Allow cooling slightly before dipping in melted butter and rolling in a cinnamon-sugar mixture.
