Ingredients
- 2 pounds ground beef (or turkey)
- 2 cans kidney beans (drained and rinsed)
- 2 small green peppers (about 2 cups diced)
- 1 small yellow onion (about 1 ½ cups diced)
- 2 cans diced tomatoes (15-ounce cans)
- 15 ounce can tomato sauce
- 6 ounce can tomato paste
- 15 ounces water
- 3 tablespoons chili powder
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 3 tablespoons cumin
- 1 tablespoon paprika
- 1 teaspoon chipotle powder
- ½ teaspoon cayenne pepper
- ½ tablespoon salt
- 1 teaspoon white pepper
- ½ teaspoon baking soda (optional)
Instructions
- In a Dutch oven, sauté diced green peppers and onions until translucent.
- Add chili powder, garlic powder, and other seasonings; cook for 1-2 minutes.
- Brown ground beef or turkey in the pot until just done.
- Stir in tomato sauce, diced tomatoes, water, and tomato paste.
- Simmer over medium-low heat for 15 minutes before adding drained beans.
- Optionally stir in baking soda; simmer until desired thickness is reached.
- Serve hot with toppings like cheese or avocado.
