- 1/2 cup Granulated Sugar (adjust as necessary)
- 1 tablespoon Lemon Juice (fresh juice is best)
- 2 tablespoons Cornstarch
- 1/2 cup Light Brown Sugar (or granulated sugar)
- 1 teaspoon Baking Powder
- 1 cup Pistachios (shelled and unsalted) (or other nuts)
- 1/2 cup Unsalted Butter (cold and cubed)
- 1 large Egg
- 1 teaspoon Vanilla Extract
Instructions
- Preheat oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, and salt. Add cold butter; mix until crumbly. Stir in egg yolk and ice water until dough forms. Press into a greased 9×9-inch baking dish and bake for 15 minutes.
- For the filling, mix blackberries, sugar, lemon juice, and cornstarch. Spread over baked crust.
- For the topping, whisk brown sugar and baking powder; add chopped pistachios, cold butter, egg, and vanilla extract; mix well. Pour over filling.
- Bake for an additional 35-40 minutes or until golden on top. Let cool completely before cutting into bars.
