  • ¾ cup all-purpose flour (or gluten-free blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter (or coconut oil)
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a large bowl, mix old-fashioned oats, flour, brown sugar, baking soda, salt, and optional cinnamon until well combined.
  3. Stir in melted butter (or coconut oil) and vanilla extract until crumbly.
  4. Press half of the oat mixture into the prepared baking pan as the base layer.
  5. In another bowl, combine blueberries, granulated sugar, and cornstarch. Spread over the oat base evenly.
  6. Crumble the remaining oat mixture on top and gently press down.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Allow to cool completely before lifting out of the pan using parchment paper; cut into squares.
