Ingredients
- 1 cup old-fashioned oats
- ¾ cup all-purpose flour (or gluten-free blend)
- ⅓ cup light brown sugar
- ¼ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon (optional)
- 6 tbsp unsalted butter (or coconut oil)
- 1 tsp vanilla extract
- 1 cup blueberries (fresh or frozen)
- ¼ cup granulated sugar
- 2 tsp cornstarch
Instructions
- Preheat the oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
- In a large bowl, mix old-fashioned oats, flour, brown sugar, baking soda, salt, and optional cinnamon until well combined.
- Stir in melted butter (or coconut oil) and vanilla extract until crumbly.
- Press half of the oat mixture into the prepared baking pan as the base layer.
- In another bowl, combine blueberries, granulated sugar, and cornstarch. Spread over the oat base evenly.
- Crumble the remaining oat mixture on top and gently press down.
- Bake for 35-40 minutes until golden brown and bubbly.
- Allow to cool completely before lifting out of the pan using parchment paper; cut into squares.
