- 4 boneless, skinless chicken breasts (6 oz each)
- Salt and freshly ground black pepper
- 1 tablespoon olive oil
- 1 cup fresh blueberries
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 teaspoons fresh thyme leaves
Instructions
- Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
- In a medium saucepan over medium heat, combine blueberries, balsamic vinegar, honey, and thyme; smash the blueberries gently while cooking for about 5 minutes until chunky.
- Heat olive oil in a cast iron skillet over medium-high heat. Sear chicken breasts for 2-3 minutes on each side until golden brown.
- Pour blueberry sauce over the chicken and transfer the skillet to the oven. Bake for 20-25 minutes or until chicken reaches an internal temperature of 165°F (74°C).
- Let rest for 3 minutes before serving; garnish with extra blueberry sauce and fresh thyme if desired.
