- 1/3 cup confectioners' sugar
- 6 ounces raspberry preserves
- 8 slices brioche bread (1 inch thick)
- 4 large eggs (lightly beaten)
- 1 cup milk
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- Unsalted butter (for cooking)
Instructions
- In a stand mixer, blend softened cream cheese, lemon juice, confectioners' sugar, and vanilla until smooth.
- In a bowl, whisk eggs, milk, vanilla extract, and cinnamon together.
- Cut pockets into each brioche slice and fill with the cream cheese mixture followed by raspberry preserves.
- Dip each stuffed slice in the egg mixture and cook in a nonstick pan with melted butter until golden brown on both sides.
- Serve immediately topped with maple syrup, fresh berries, or powdered sugar.
