Ingredients
- 8 Russet potatoes (peeled and diced)
- 2 pounds boneless, skinless chicken breasts (cut into pieces)
- ¼ cup buffalo sauce
- 2 tablespoons extra virgin olive oil
- 1 packet ranch seasoning mix
- 1 cup shredded mild cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 8-10 slices thick-cut turkey bacon (cooked and crumbled)
- Green onions (for garnish)
Instructions
- Preheat your oven to 425°F and line a large sheet pan with parchment paper.
- In a mixing bowl, combine olive oil, buffalo sauce, ranch seasoning, and black pepper. Toss in the diced potatoes until well coated.
- Spread the potatoes evenly on the prepared sheet pan and bake for about 40 minutes until golden brown.
- While the potatoes bake, coat the chicken pieces with any remaining buffalo sauce mixture in a separate bowl.
- Once the potatoes are done, add the marinated chicken on top along with shredded cheeses and crumbled turkey bacon.
- Return to the oven and bake for an additional 30-35 minutes until chicken is cooked through and cheeses melt.
- Garnish with chopped green onions before serving.
