- 3 cups all-purpose flour

- 1/2 cup chopped pecans (optional)
- 2 cups granulated sugar
- 1/2 cup unsalted butter (room temperature)
- 2 large eggs (room temperature)
- 1 cup buttermilk (or substitute with milk mixed with lemon juice)
- 2 1/4 cups very ripe mashed bananas (about 5 medium bananas)
Instructions
- Preheat oven to 300°F. Butter and line two 9×5-inch loaf pans with parchment paper.
- In a bowl, sift together flour, salt, baking powder, and baking soda. Add chopped pecans if using.
- In another bowl, cream together sugar and butter until fluffy. Beat in eggs one at a time, then fold in mashed bananas.
- Gradually mix dry ingredients into the banana mixture, alternating with buttermilk until just combined.
- Pour batter into prepared pans and bake for about 1 hour or until a toothpick comes out clean.
