  • 2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz.) packages cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs
  • 2 cups granulated sugar
  • 1/2 tablespoon vanilla extract
  • 1/2 tablespoon butter flavoring
  • 1/2 cup butterscotch sauce
  • 1/2 cup butterscotch chips
  • 8 oz. tub of cool whip
  • 1/4 cup cream soda

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press evenly into an 8-inch springform pan.
  3. Beat cream cheese until smooth; add sour cream and blend well. Gradually incorporate sugar until combined.
  4. Add eggs individually, mixing well after each addition. Stir in vanilla extract, butter flavoring, butterscotch sauce, cream soda, and butterscotch chips until blended.
  5. Pour filling over the crust in the pan and smooth the top with a spatula.
  6. Bake for about 60 minutes or until edges are set with a slightly jiggly center.
  7. Turn off the oven and let cool inside with the door ajar for one hour; then refrigerate for at least four hours or overnight.
  8. Serve chilled topped with cool whip and additional butterscotch sauce.
