Dressing Ingredients
1/4 cup lemon juice (from about 1½ lemons)
1/4 cup minced shallot
1 tablespoon honey
1 teaspoon Dijon mustard
1/4 cup extra virgin olive oil

Instructions
Step 1: Prepare the Salad Base
Slice the celery stalks thinly and place them in a large salad bowl. Add the chopped apple and parsley.
Step 2: Add the Crunch
Stir in the sliced almonds and chopped pistachios for texture and flavor.
Step 3: Make the Dressing
In a small bowl, whisk together the lemon juice, minced shallot, honey, and Dijon mustard. Slowly drizzle in the olive oil while whisking until the dressing is smooth and emulsified.
Step 4: Combine the Salad
Pour the dressing over the celery and apple mixture. Toss gently to coat everything evenly.
