  • 2 small gala or honeycrisp apples, diced
  • 1/2 english cucumber, finely chopped
  • 1 shallot, quartered and thinly sliced
  • 8 pitted dates, chopped
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup chopped or shaved parmesan cheese
  • 1 1/2 cups shaved parmesan cheese
  • 1/4 cup lemon juice
  • 1 teaspoon dijon mustard
  • 1/4 cup mayonnaise
  • 3 Tablespoon olive oil
  • 1 Tablespoon honey
  • 1 clove garlic, grated
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper

Instructions

  1. In a large mixing bowl, combine sliced celery, diced apples, chopped cucumber, quartered shallots, chopped dates, walnuts (or pecans), and chopped Parmesan.
  2. In a separate bowl, whisk together lemon juice, Dijon mustard, mayonnaise, olive oil, honey, grated garlic, kosher salt, and black pepper until smooth.
  3. Pour dressing over salad ingredients and toss gently until evenly coated. Serve immediately or refrigerate for later.
