Ingredients
For the Salad
1 medium bunch celery, chopped
1 medium shallot, finely chopped
8 pitted Medjool dates, chopped
1 green apple, finely chopped
1/2 cup chopped pistachios
1/2 cup grated Parmesan cheese
For the Dressing
1 tablespoon Dijon mustard
1/3 cup apple cider vinegar
1 tablespoon honey
1/3 cup extra virgin olive oil
Kosher salt and black pepper, to taste
Instructions
1. Prepare the Salad Base
Wash and chop the celery into small bite-sized pieces.
Finely chop the shallot, apple, and dates.
Add everything to a large mixing bowl along with pistachios and Parmesan.
In a small bowl, whisk together Dijon mustard, apple cider vinegar, and honey.
Slowly drizzle in olive oil while whisking continuously until emulsified.
Season with salt and black pepper to taste.
Pour the dressing over the salad and toss well to coat evenly.
Let sit for 10–15 minutes before serving to allow flavors to meld.
