Ingredients

  • ¾ cup Fresh flat leaf parsley (Leaves and stems)
  • ¾ cup Fresh cilantro (coriander) (Leaves and stems)
  • 2-3 Garlic cloves
  • 2-3 tbsp Extra-virgin olive oil
  • 1 Lemon zest (From 1 lemon)
  • 2 tbsp Lemon juice (From 1 lemon)
  • 1 tsp Ground cumin
  • 1 tsp Ground coriander
  • ½ tsp Smoked paprika
  • ½ tsp Red pepper flakes (Optional, use more or less)
  • Kosher salt and black pepper to taste

Instructions

  1. Combine parsley, cilantro, garlic, olive oil, lemon juice and zest, cumin, coriander, paprika, red pepper flakes (if using), salt, and pepper in a food processor.
  2. Process until the mixture reaches a chunky sauce consistency.
  3. Taste and adjust seasoning as needed; add more olive oil for a looser texture.
  4. Serve at room temperature as a condiment or dressing.
