- ¾ cup Fresh flat leaf parsley (Leaves and stems)
- ¾ cup Fresh cilantro (coriander) (Leaves and stems)
- 2-3 Garlic cloves
- 2-3 tbsp Extra-virgin olive oil
- 1 Lemon zest (From 1 lemon)
- 2 tbsp Lemon juice (From 1 lemon)
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- ½ tsp Smoked paprika
- ½ tsp Red pepper flakes (Optional, use more or less)
- Kosher salt and black pepper to taste
Instructions
- Combine parsley, cilantro, garlic, olive oil, lemon juice and zest, cumin, coriander, paprika, red pepper flakes (if using), salt, and pepper in a food processor.
- Process until the mixture reaches a chunky sauce consistency.
- Taste and adjust seasoning as needed; add more olive oil for a looser texture.
- Serve at room temperature as a condiment or dressing.
