Ingredients

Scale
  • 4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 1½ cups cold unsalted butter (cubed)
  • 2 large eggs
  • ½ cup ice water
  • 1 tablespoon lemon juice
  • 6 to 7 cups sliced apples (peeled and cored)
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tablespoons cornstarch
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter

Instructions

  1. In a bowl, whisk together flour, sugar, and salt. Cut in cold butter until coarse crumbs form.
  2. Mix eggs, ice water, and lemon juice in another bowl. Combine with flour mixture until dough forms. Chill for 30 minutes.
  3. Preheat oven to 375°F (190°C) and prepare a baking pan.
  4. Roll out the larger piece of dough and press into the pan. Fill with spiced apple mixture made from apples tossed with sugars, cornstarch, spices, lemon juice, and vanilla.
  5. Roll out the remaining dough for the top crust; cut vents to allow steam escape.
  6. Bake for 45 to 50 minutes until golden brown. Cool completely before glazing.
