  • 1 cup green olives, pitted
  • 1 cup prunes, pitted
  • 1/2 cup capers
  • 1/2 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1/4 cup orange juice
  • 4 cloves garlic, minced
  • 1 tablespoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, apple cider vinegar, orange juice, minced garlic, oregano, salt, and pepper.
  2. Place chicken thighs in a baking dish and pour marinade over them, ensuring they are well coated. Add olives, prunes, and capers on top. Cover and refrigerate for at least 2 hours or overnight.
  3. Preheat oven to 375°F (190°C). Bake uncovered for 45-50 minutes until the internal temperature reaches 165°F (75°C), basting occasionally.
