- 8 chicken thighs
- 1 cup green olives, pitted
- 1 cup prunes, pitted
- 1/2 cup capers
- 1/2 cup olive oil
- 1/4 cup apple cider vinegar
- 1/4 cup orange juice
- 4 cloves garlic, minced
- 1 tablespoon dried oregano
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together olive oil, apple cider vinegar, orange juice, minced garlic, oregano, salt, and pepper.
- Place chicken thighs in a baking dish and pour marinade over them, ensuring they are well coated. Add olives, prunes, and capers on top. Cover and refrigerate for at least 2 hours or overnight.
- Preheat oven to 375°F (190°C). Bake uncovered for 45-50 minutes until the internal temperature reaches 165°F (75°C), basting occasionally.
- Let rest for a few minutes before serving.
