Instructions
- Rinse and dice the cucumbers into bite-sized pieces.
- Seed and dice the tomatoes for added texture.
- Finely dice the red onion to add a mild crunch.
- In a large mixing bowl, combine chickpeas, cucumbers, tomatoes, red onion, parsley, lemon juice, olive oil, salt, and pepper.
