- 3 large egg whites
- 3/4 cup granulated sugar
- 1/4 tsp cream of tartar
- 1/4 tsp salt
- 1/2 tsp strawberry extract
- Pink gel food coloring (optional)
- 1/2 cup dark or semi-sweet chocolate chips
Instructions
- Preheat your oven to 225°F (110°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat the egg whites and cream of tartar on medium speed until foamy.
- Gradually add the granulated sugar, one tablespoon at a time, beating on high until stiff peaks form.
- Gently fold in salt, strawberry extract, and optional pink food coloring.
- Spoon or pipe small rounds of meringue onto the prepared baking sheet.
- Bake for 1.5 hours; turn off the oven and let cool inside with the door ajar.
- Once cooled, dip the bottoms in melted chocolate and let set on parchment paper.
