- 1 cup cottage cheese
- 1 cup rolled oats
- 1/2 cup applesauce or grated apple
- 1 large egg
- 1/2 tsp cinnamon
- 1 tbsp honey or maple syrup (optional)
- 1/2 tsp baking powder
- Pinch of salt
Instructions
- Preheat your oven to 350°F (175°C) and grease a mini muffin pan.
- In a mixing bowl, combine cottage cheese, rolled oats, applesauce (or grated apple), egg, cinnamon, honey/maple syrup (if using), baking powder, and salt. Mix until well combined.
- Let the batter rest for about 5 minutes for optimal texture.
- Scoop mixture into the mini muffin pan, filling each cup almost to the top.
- Bake for 18–20 minutes until set and lightly golden.
- Cool in the pan for a few minutes before transferring to a wire rack.
