Ingredients
- 1 cup natural creamy almond butter
- ⅓ cup pure maple syrup
- ½ cup vanilla protein powder
- 2 teaspoons vanilla extract
- ½ cup rolled oats
- 1 teaspoon salt
- 1 ½ teaspoons cinnamon
- ½ cup white chocolate chips
- 1 teaspoon coconut oil
Instructions
- In a mixing bowl, combine almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon. Mix until well combined.
- Line a baking sheet with wax paper and use a mini cookie scoop to portion out batter onto the sheet. Roll each portion into smooth balls.
- In a microwave-safe bowl, melt white chocolate chips with coconut oil in 10-15 second increments until smooth.
- Drizzle melted chocolate over each energy bite and refrigerate for at least 1 hour until firm.
- Store in an airtight container in the refrigerator or freezer.
