- 1/4 cup sugar (for filling)
- 1 tablespoon ground cinnamon (for filling)
- 1 cup powdered sugar (for glaze)
- 2 tablespoons milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a 9×5 inch loaf pan with parchment paper or cooking spray.
- In one bowl, mix flour, baking soda, baking powder, and salt. In another bowl, combine sugar, eggs, vegetable oil, vanilla extract, and grated zucchini until smooth.
- Gradually add dry ingredients to the wet mixture and stir gently until just combined.
- For the cinnamon filling, mix melted butter with sugar and cinnamon in a small bowl.
- Layer half of the batter in the pan, drizzle half the filling on top, then repeat with remaining batter and filling.
- Bake for 45-55 minutes or until a toothpick inserted comes out clean. Let cool before drizzling with glaze made from powdered sugar and milk.
