- 1 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 cups mashed ripe bananas (about 4 bananas)
- For the cinnamon sugar swirl: 3 tablespoons unsalted butter, melted
- 3 tablespoons granulated sugar
- 3 tablespoons dark brown sugar
- 2 tablespoons ground cinnamon
Instructions
- Preheat your oven to 350°F. Grease and flour a 9×5-inch loaf pan.
- In a large bowl, melt the butter and let it cool slightly before whisking in the sugar. Add eggs and vanilla; mix until combined.
- Stir in flour and baking soda until just mixed, then fold in mashed bananas.
- In a separate bowl, mix cinnamon sugar swirl ingredients until well combined. If needed, adjust consistency with melted butter.
- Layer batter and cinnamon mixture in the prepared pan, swirling gently between layers.
- Bake for 60-70 minutes or until golden brown and a toothpick comes out clean.
- Cool for at least 30 minutes before slicing.
