- Zest of one orange or tangerine
- 1 heaping cup fresh cranberries (roughly chopped)
- 2 cups all-purpose flour
- 1 tsp pure vanilla extract
Instructions
- Prepare cranberries by roughly chopping and setting aside.
- In a mixing bowl or food processor, cream the unsalted butter, granulated sugar, and orange zest until well combined.
- Add all-purpose flour and vanilla extract, pulsing until the dough begins to clump together.
- Gently mix in the chopped cranberries until evenly distributed.
- Turn the dough onto a floured surface and shape into a log about 10-12 inches long; wrap in plastic wrap and chill for at least 3 hours or overnight.
- Preheat oven to 350°F and line a baking sheet with parchment paper.
- Slice the chilled dough into 1/3 inch thick rounds and arrange on the prepared baking sheet, leaving space between each slice.
- Bake for 10-12 minutes until pale on top with golden bottoms; cool briefly on the baking sheet before transferring to a wire rack.
