- 2 large ripe bananas, mashed
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground cinnamon
- For cream cheese filling: 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a bowl, mash the bananas and whisk in melted butter, brown sugar, eggs, and vanilla until combined.
- In another bowl, mix flour, baking soda, salt, and cinnamon.
- Gradually combine the dry ingredients with the banana mixture until just mixed.
- For the cream cheese filling, beat cream cheese with sugar, egg, and vanilla until smooth.
- Layer half of the banana batter in the pan, sprinkle half of the cinnamon-sugar mix and spread half of the cream cheese filling on top. Repeat with remaining batter and swirl gently.
- Bake for 50–60 minutes or until a toothpick comes out clean.
- Allow to cool before slicing.
