- 1 pound rotini pasta
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 4 tablespoons butter
- 4 cloves garlic
- 2 tablespoons Cajun seasoning
- 1 teaspoon paprika
- 1 cup heavy cream
- 1 cup chicken broth
- 8 ounces cream cheese
- 2 cups shredded mozzarella cheese
Instructions
- Cook the rotini pasta in boiling salted water until al dente, then drain and set aside.
- In a skillet, heat olive oil and half of the butter over medium heat. Add chicken seasoned with salt, pepper, and paprika; cook until golden brown.
- Stir in minced garlic and cook until fragrant.
- Add remaining butter and Cajun seasoning to the skillet. Pour in chicken broth and simmer before mixing in heavy cream and softened cream cheese.
- Combine cooked rotini with the sauce and stir in half of the mozzarella cheese until melted. Top with remaining cheese and let it sit until bubbly.
