  • 1 1/2 pounds boneless skinless chicken breasts, cubed
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 1/2 cups heavy cream
  • 4 ounces cream cheese, softened
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Chopped parsley for garnish

Instructions

  1. Cook penne in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add seasoned chicken cubes and cook until browned (6-7 minutes). Remove and set aside.
  3. In the same skillet, reduce heat to medium. Add remaining butter and sauté diced onion until translucent (about 3 minutes). Stir in minced garlic for an additional 30 seconds.
  4. Sprinkle flour over the mixture and stir constantly for one minute. Gradually whisk in chicken broth and heavy cream until smooth.
  5. Stir in cream cheese until melted, then add mozzarella and Parmesan cheeses until fully incorporated and thickened.
  6. Toss cooked chicken and penne in the sauce until evenly coated. Simmer for a few minutes to heat through before serving.
