Ingredients
- 12 ounces penne pasta
- 1 1/2 pounds boneless skinless chicken breasts, cubed
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter, divided
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 1/2 cups heavy cream
- 4 ounces cream cheese, softened
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Chopped parsley for garnish
Instructions
- Cook penne in salted boiling water until al dente. Drain and set aside.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Add seasoned chicken cubes and cook until browned (6-7 minutes). Remove and set aside.
- In the same skillet, reduce heat to medium. Add remaining butter and sauté diced onion until translucent (about 3 minutes). Stir in minced garlic for an additional 30 seconds.
- Sprinkle flour over the mixture and stir constantly for one minute. Gradually whisk in chicken broth and heavy cream until smooth.
- Stir in cream cheese until melted, then add mozzarella and Parmesan cheeses until fully incorporated and thickened.
- Toss cooked chicken and penne in the sauce until evenly coated. Simmer for a few minutes to heat through before serving.
