Ingredients
- Udon noodles (fresh or frozen)
- White or yellow miso paste
- Full-fat coconut milk
- Low-sodium vegetable broth
- Fresh garlic cloves
- Sliced green onions for garnish
Instructions
- Cook the udon noodles in boiling water according to package instructions (3-5 minutes). Drain and set aside.
- In a saucepan over medium heat, combine vegetable broth and coconut milk. Stir in miso paste until fully dissolved.
- Add minced garlic and heat through without boiling.
- Toss the cooked udon noodles into the sauce until well-coated.
- Serve hot, garnished with sliced green onions.
