  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 4 ounces cream cheese (softened)
  • Salt & pepper (to taste)
  • Lime juice
  • Avocado
  • Cilantro
  • Mexican cheese blend
  • Tortilla strips

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion for 5-7 minutes until golden.
  2. Add bite-sized chicken pieces and cook until no longer pink.
  3. Stir in minced garlic and cook for about 30 seconds until fragrant.
  4. Add chicken broth, white beans, green chilies, chili powder, ground cumin, and oregano. Bring to a boil then reduce heat to simmer for 10 minutes.
  5. Cut cream cheese into cubes, microwave briefly to soften, then stir into the chili until well combined. Simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste before serving hot with desired toppings.
