- 16 ounces beef sausage
- 1/2 medium onion (chopped)
- 4 cloves garlic (minced)
- 2 medium carrots (sliced or chopped)
- 2 sticks celery (chopped finely)
- 28 ounces crushed tomatoes
- 14 ounces diced tomatoes (with juices)
- 4 cups chicken broth
- 2 packages refrigerated cheese tortellini
- 2 cups fresh baby spinach
- Salt & pepper (to taste)
Instructions
- Brown the beef sausage and onions in a skillet over medium heat for about 7-8 minutes until browned. Drain excess fat if necessary.
- Add minced garlic to the skillet and cook for another 30 seconds before transferring the mixture to your Crockpot.
- In the Crockpot, combine carrots, celery, both canned tomatoes, and chicken broth.
- For quicker cooking, chop carrots finely; otherwise, larger chunks are fine for longer cooking times.
- About 30 minutes before serving, stir in cheese tortellini, spinach, and optional cream on 'high' heat. Adjust seasoning with salt and pepper.
