  • 4 cloves garlic (minced)
  • 2 medium carrots (sliced or chopped)
  • 2 sticks celery (chopped finely)
  • 28 ounces crushed tomatoes
  • 14 ounces diced tomatoes (with juices)
  • 4 cups chicken broth
  • 2 packages refrigerated cheese tortellini
  • 2 cups fresh baby spinach
  • Salt & pepper (to taste)

Instructions

  1. Brown the beef sausage and onions in a skillet over medium heat for about 7-8 minutes until browned. Drain excess fat if necessary.
  2. Add minced garlic to the skillet and cook for another 30 seconds before transferring the mixture to your Crockpot.
  3. In the Crockpot, combine carrots, celery, both canned tomatoes, and chicken broth.
  4. For quicker cooking, chop carrots finely; otherwise, larger chunks are fine for longer cooking times.
  5. About 30 minutes before serving, stir in cheese tortellini, spinach, and optional cream on 'high' heat. Adjust seasoning with salt and pepper.
