  • 1 cup green beans (trimmed and chopped)
  • ¾ cup marinara sauce
  • ½ cup canned or frozen corn
  • 1 bay leaf
  • 1 tablespoon oil
  • 2 tablespoons tomato paste
  • 4 cloves garlic (finely minced)
  • 1½ teaspoons salt
  • 1 teaspoon dried parsley
  • ½ teaspoon dried thyme
  • ¼ teaspoon paprika
  • ¼ teaspoon pepper

Instructions

  1. Heat oil in a large skillet over medium-high heat. Brown the cubed beef on all sides, then transfer it to a slow cooker.
  2. In the same skillet, sauté chopped carrots, celery, and onion until softened. Mix in tomato paste, garlic, salt, parsley, thyme, paprika, and pepper; cook for an additional minute.
  3. Add sautéed vegetables to the slow cooker with beef. Pour in broth, potatoes, diced tomatoes (with juice), green beans, marinara sauce, corn, and bay leaf.
  4. Cover and cook on low for 7 to 8 hours until beef and vegetables are tender. Remove bay leaf before serving.
