- 6 large one-day-old croissants
- 1 tablespoon diced almonds (per croissant)
- Powdered sugar (for dusting)
- 3/4 cup water
- 3 tablespoons vanilla extract (alcohol-free)
- 2 tablespoons granulated sugar
- 1 cup almond flour or almond meal
- 1/2 cup granulated sugar
- 8 tablespoons softened salted butter
- 1 large egg
- 1 teaspoon almond extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, 1/2 cup sugar, softened butter, egg, and almond extract until smooth.
- Carefully slice each croissant open lengthwise.
- Generously fill each croissant with the almond mixture.
- In another bowl, mix water, vanilla extract, and remaining sugar; briefly soak each filled croissant in this mixture.
- Place croissants on a lined baking sheet and bake for about 15 minutes until golden brown.
- Let cool slightly before dusting with powdered sugar and serving.
