  • 1/4 cup cornstarch
  • 2 teaspoons vanilla extract
  • 5 medium apples (peeled, cored, and chopped)
  • 1/4 cup brown sugar
  • 1/2 teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 cup rolled oats
  • 1/2 cup flour

Instructions

  1. Preheat the oven to 350°F (175°C). Combine crushed graham crackers, sugar, cinnamon, and melted butter in a bowl; press into the bottom of a springform pan. Bake for 10 minutes and cool.
  2. Beat cream cheese and sour cream until smooth. Add eggs one at a time, mixing well after each addition. Stir in cornstarch and vanilla until just combined.
  3. Toss chopped apples with brown sugar, nutmeg, and lemon juice in another bowl. Layer half the cheesecake filling over the crust followed by half the apple mixture; repeat.
  4. Bake for about 60 minutes until set but slightly jiggly in the center. Turn off the oven; leave cheesecake inside for an additional hour to cool gradually.
  5. Sprinkle oats and flour mixture on top once cooled; chill in the refrigerator for at least four hours before serving.
