- 1 cup crushed graham crackers
- 2 tablespoons granulated sugar
- 1 teaspoon cinnamon
- 1/2 cup unsalted butter (melted)
- 16 oz cream cheese (room temperature)
- 1/2 cup sour cream
- 3 large eggs (room temperature)
- 1/4 cup cornstarch
- 2 teaspoons vanilla extract
- 5 medium apples (peeled, cored, and chopped)
- 1/4 cup brown sugar
- 1/2 teaspoon nutmeg
- 1 tablespoon lemon juice
- 1 cup rolled oats
- 1/2 cup flour
Instructions
- Preheat the oven to 350°F (175°C). Combine crushed graham crackers, sugar, cinnamon, and melted butter in a bowl; press into the bottom of a springform pan. Bake for 10 minutes and cool.
- Beat cream cheese and sour cream until smooth. Add eggs one at a time, mixing well after each addition. Stir in cornstarch and vanilla until just combined.
- Toss chopped apples with brown sugar, nutmeg, and lemon juice in another bowl. Layer half the cheesecake filling over the crust followed by half the apple mixture; repeat.
- Bake for about 60 minutes until set but slightly jiggly in the center. Turn off the oven; leave cheesecake inside for an additional hour to cool gradually.
- Sprinkle oats and flour mixture on top once cooled; chill in the refrigerator for at least four hours before serving.
