- 5.5-6 cups celery (diagonally diced)
- 1 medium Honeycrisp apple (diced with skin on)
- ¾ cup dried cranberries
- ½-¾ cup red onion (finely diced)
- 1 cup pecans (toasted)
- 1 Tablespoon pure maple syrup
- 3 Tablespoons red apple vinegar
- 1 Tablespoon lemon juice
- 2 Tablespoons + 1 teaspoon tahini
- 2 teaspoons Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 pinch to 1 sea salt
Instructions
- Start by washing all fresh produce. Dice the celery, Honeycrisp apple, red onion, and toast the pecans until golden brown.
- In a mixing bowl, combine tahini, Dijon mustard, garlic powder, onion powder, lemon juice, maple syrup, red apple vinegar, and sea salt. Whisk until smooth.
- In a large mixing bowl, add diced celery, apple, red onion, dried cranberries, and toasted pecans. Pour the dressing over the salad mixture.
- Gently toss all ingredients until evenly coated with dressing. Serve immediately or refrigerate for up to an hour before serving to enhance flavors.
