- 1 cup softened butter

- 2 cups quick oats

Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, beat together softened butter, egg, honey, and vanilla until smooth.
- In another bowl, combine flour, quick oats, baking powder, baking soda, salt, and shredded coconut.
- Gradually mix the dry ingredients into the wet mixture until just combined.
- Drop rounded tablespoons of dough onto the prepared baking sheet with space in between.
- Bake for about 8 minutes or until golden brown around the edges.
- Allow cookies to cool before enjoying.
