- 1/2 cup Greek yogurt
- 1/2 cup buttermilk
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1 tsp vanilla extract
- 1 1/2 tsp almond extract
- 3/4 cup white sugar
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1 1/2 cups cherries (pitted and quartered)
- 1 tbsp cornstarch
- 1/2 cup sliced almonds
Instructions
- Preheat your oven to 350°F (177°C) and line an 8½-inch loaf pan with parchment paper.
- In a large mixing bowl, whisk together eggs, Greek yogurt, buttermilk, melted butter, vanilla extract, almond extract, and sugar until well combined.
- In another bowl, mix all-purpose flour, baking powder, and salt; sift into the wet ingredients and blend briefly.
- Toss pitted cherries in cornstarch and fold into the batter along with sliced almonds. Reserve some for topping.
- Pour batter into the prepared pan and garnish with reserved cherries and almonds.
- Bake for 50 to 60 minutes or until a toothpick inserted comes out clean. Cool on a wire rack before slicing.
