Ingredients
- 2 hearts of celery (about 20 stalks, with leaves)
- 1 medium red onion (quartered and thinly sliced)
- ½ cup extra-virgin olive oil
- 2 lemons (zest and juice)
- 2 tablespoons red apple vinegar
- 2 tablespoons capers (drained and roughly chopped)
- 1 teaspoon minced garlic
- 1 tablespoon fresh oregano leaves
- ¼ cup fresh parsley leaves (roughly chopped)
- Kosher salt and freshly ground pepper (to taste)
Instructions
- Trim and coarsely chop the healthy celery leaves. Slice the celery stalks diagonally into ¼-inch pieces.
- In a large serving bowl, combine the sliced celery and red onion.
- In a separate bowl, whisk together olive oil, lemon zest, lemon juice, red apple vinegar, capers, garlic, oregano, parsley, salt, pepper, and optional red pepper flakes.
- Pour the dressing over the celery and onions; toss until evenly coated.
- For enhanced flavor, cover and refrigerate for at least an hour before serving.
- Toss again before serving; enjoy on its own or alongside grilled chicken or turkey.
