Ingredients
- 6 day-old croissants
- 1/2 cup salted butter (softened)
- 1 1/4 cups almond flour
- 1 large egg
- 6 ounces chocolate bar (cut into pieces)
- 1/4 cup sugar for simple syrup
- 1/4 cup water for simple syrup
- 1/4 teaspoon almond extract (optional)
- 2 teaspoons almond extract
- 1 teaspoon vanilla extract
- 1/4 cup sliced almonds
- 4 ounces chocolate (melted to drizzle on croissants)
- Powdered sugar for dusting
Instructions
- Preheat the oven to 350°F.
- In a microwave-safe bowl, combine 1/4 cup water and 1/4 cup sugar; heat until dissolved. Stir in almond extract if desired.
- In a mixing bowl, blend almond flour, softened butter, granulated sugar, egg, almond extract, and vanilla extract until smooth.
- Slice each croissant in half horizontally; brush inside with simple syrup.
- Spread almond filling on the bottom half of each croissant; add chocolate pieces before replacing the top half.
- Top each croissant with reserved filling and sliced almonds.
- Bake for 12-16 minutes until golden brown.
- Drizzle melted chocolate over cooled croissants and dust with powdered sugar.
