  • 1/4 cup water for simple syrup
  • 1/4 teaspoon almond extract (optional)
  • 2 teaspoons almond extract
  • 1 teaspoon vanilla extract
  • 1/4 cup sliced almonds
  • 4 ounces chocolate (melted to drizzle on croissants)
  • Powdered sugar for dusting

Instructions

  1. Preheat the oven to 350°F.
  2. In a microwave-safe bowl, combine 1/4 cup water and 1/4 cup sugar; heat until dissolved. Stir in almond extract if desired.
  3. In a mixing bowl, blend almond flour, softened butter, granulated sugar, egg, almond extract, and vanilla extract until smooth.
  4. Slice each croissant in half horizontally; brush inside with simple syrup.
  5. Spread almond filling on the bottom half of each croissant; add chocolate pieces before replacing the top half.
  6. Top each croissant with reserved filling and sliced almonds.
