1 (15.25-oz) can corn, undrained
1 (10-oz) can Rotel tomatoes, undrained

1 package ranch dressing mix
1 teaspoon cumin
1 tablespoon chili powder
1 teaspoon onion powder

Main Components

1 (8-oz) package light cream cheese
2 chicken breasts

Instructions

1. Add Ingredients to Crock Pot
Place the chicken breasts in the bottom of the crock pot. Add the black beans, corn, and Rotel tomatoes on top.

2. Season the Chili
Sprinkle the ranch dressing mix, cumin, chili powder, and onion powder evenly over the ingredients.

3. Add Cream Cheese
Place the cream cheese block on top of everything in the slow cooker.

4. Cook
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and tender.

5. Shred the Chicken
Remove the chicken breasts, shred them with two forks, then return them to the crock pot.

6. Stir and Serve
Stir well so the cream cheese melts completely and blends into the chili, creating a creamy texture.
