Ingredients
- 12 oz fresh ripe mangoes
- 0.54 cups coconut milk (full-fat)
- 2 tbsp cold water
- 1.5 tbsp white granulated sugar
- 1.5 tbsp vegan gelatin powder
- 4 tbsp evaporated milk (or additional coconut milk)
Instructions
- Peel and slice ripe mangoes into small pieces, then blend until smooth.
- In a bowl, mix cold water with vegan gelatin until thickened.
- Combine the gelatin mixture with sugar, coconut milk, and blended mango; stir until smooth.
- Heat the mixture on medium-low heat for 3-4 minutes until gelatin dissolves completely.
- Pour into serving bowls or silicone molds and refrigerate for at least 6 hours to set.
