Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9-inch round cake pan.
  2. In a mixing bowl, beat eggs and sugar until pale and fluffy. Add sour cream, olive oil, and vanilla extract; mix until combined.
  3. In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring gently.
  4. Fold in hulled strawberries carefully.
  5. Pour batter into the prepared cake pan and bake for about 50 minutes or until a toothpick comes out clean.
  6. For the sauce, simmer halved strawberries with sugar over medium heat until juices release.
