- 2 large eggs
- 1 cup granulated sugar
- 1 cup sour cream
- 1/2 cup light olive oil
- 1 tsp vanilla extract
- 2 cups all-purpose flour

- 1/4 tsp salt
- 12 oz strawberries for the cake (hulled)
- 16 oz strawberries for the sauce (hulled and halved)
- 1/4 cup granulated sugar for the sauce
- 1 tsp powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a greased 9-inch round cake pan.
- In a mixing bowl, beat eggs and sugar until pale and fluffy. Add sour cream, olive oil, and vanilla extract; mix until combined.
- In another bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture, stirring gently.
- Fold in hulled strawberries carefully.
- Pour batter into the prepared cake pan and bake for about 50 minutes or until a toothpick comes out clean.
- For the sauce, simmer halved strawberries with sugar over medium heat until juices release.
