- 1 1/2 pounds fresh strawberries
- 1/3 cup granulated sugar

Instructions
- Slice or dice the strawberries, reserving one-third for later.
- In a saucepan over medium heat, combine two-thirds of the strawberries with sugar.
- Mix lemon juice, cornstarch, vanilla, and salt in a bowl until smooth; add to the saucepan.
- Stir until boiling; reduce heat and simmer for 4-5 minutes until thickened.
- Stir in reserved strawberries; let cool before transferring to an airtight container.
