  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 Tablespoons chives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium-high heat. Brown the seasoned beef cubes for about 6-8 minutes.
  3. Add chopped onion and carrots; cook for an additional 4-5 minutes until slightly softened.
  4. Sprinkle flour over the mixture, stir well, then add apple cider and beef broth; bring to a boil.
  5. Transfer to an oven-safe pan, cover tightly, and bake for 1 – 1½ hours until meat is tender.
  6. Meanwhile, boil peeled potatoes until tender, drain, and mash with milk, sour cream, cheddar cheese, and chives until creamy.
  7. Serve the stew generously over mashed potatoes.
