Ingredients
- 1 tablespoon olive oil
- 113 g spinach leaves
- 1 pinch salt
- 6-8 pieces sun-dried tomatoes (packed in oil, chopped)
- ½ cup feta cheese (crumbled)
- ¼ cup cheddar cheese (grated)
- 1 pinch oregano
- 1 pinch red pepper flakes
- 4 slices sourdough bread
- 2 tablespoons butter (softened at room temperature)
Instructions
- Heat olive oil in a non-stick pan and sauté spinach for 5–6 minutes until wilted. Season with salt and transfer to a plate.
- Spread butter on one side of each sourdough slice; place two slices in the pan butter-side down.
- Layer chopped sun-dried tomatoes, half of the feta and cheddar cheese, and cooked spinach on the bread. Top with remaining cheese and sprinkle with oregano.
- Place another slice of bread on top, butter-side up. Cook over medium heat for about 5 minutes until golden brown; flip and cook for another 5 minutes.
- Serve hot, optionally drizzled with honey.
