  • 1 tablespoon olive oil
  • 113 g spinach leaves
  • 1 pinch salt
  • 6-8 pieces sun-dried tomatoes (packed in oil, chopped)
  • ½ cup feta cheese (crumbled)
  • ¼ cup cheddar cheese (grated)
  • 1 pinch oregano
  • 1 pinch red pepper flakes
  • 4 slices sourdough bread
  • 2 tablespoons butter (softened at room temperature)

Instructions

  1. Heat olive oil in a non-stick pan and sauté spinach for 5–6 minutes until wilted. Season with salt and transfer to a plate.
  2. Spread butter on one side of each sourdough slice; place two slices in the pan butter-side down.
  3. Layer chopped sun-dried tomatoes, half of the feta and cheddar cheese, and cooked spinach on the bread. Top with remaining cheese and sprinkle with oregano.
  4. Place another slice of bread on top, butter-side up. Cook over medium heat for about 5 minutes until golden brown; flip and cook for another 5 minutes.
  5. Serve hot, optionally drizzled with honey.
