- ¼ cup ghee or butter
- 1 tablespoon olive oil
- 1 lb Yukon gold potatoes, cut into ½ inch cubes
- 3 garlic cloves, minced
- 1 teaspoon dried thyme
- ½ teaspoon dried oregano
- 1 ¼ lb sirloin steak, cut into ½ inch cubes
- ½ teaspoon sea salt plus more to taste
- ¼ teaspoon ground black pepper plus more to taste
Instructions
- Heat a large cast iron skillet over medium heat, adding olive oil and two tablespoons of ghee.
- Once melted, add the potatoes with minced garlic and seasonings. Cook for about 8-10 minutes until golden brown.
- Increase heat to medium-high and add the remaining ghee with seasoned steak cubes. Sear for about 2 minutes without stirring.
- Stir occasionally until the steak is golden brown (about another minute).
- Combine cooked potatoes back into the skillet with the steak, adjust seasoning if necessary, and garnish with chopped parsley before serving.
