Ingredients

  • ¼ cup ghee or butter
  • 1 tablespoon olive oil
  • 1 lb Yukon gold potatoes, cut into ½ inch cubes
  • 3 garlic cloves, minced
  • 1 teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 1 ¼ lb sirloin steak, cut into ½ inch cubes
  • ½ teaspoon sea salt plus more to taste
  • ¼ teaspoon ground black pepper plus more to taste

Instructions

  1. Heat a large cast iron skillet over medium heat, adding olive oil and two tablespoons of ghee.
  2. Once melted, add the potatoes with minced garlic and seasonings. Cook for about 8-10 minutes until golden brown.
  3. Increase heat to medium-high and add the remaining ghee with seasoned steak cubes. Sear for about 2 minutes without stirring.
  4. Stir occasionally until the steak is golden brown (about another minute).
  5. Combine cooked potatoes back into the skillet with the steak, adjust seasoning if necessary, and garnish with chopped parsley before serving.
